CHEF GABRIELE 'GRIGO' GRIGOLON
Aqua e Vino is the vision and life long aspiration of Italian born and trained Chef, Gabriele Grigolon.
Chef Grigo has enjoyed a career that includes famous restaurants around the world: Il Cortile (under the management of renowned Alain Ducasse) in Paris, France; Aimo e Nadia in Milan, Italy; and several in upscale Monte Carlo, Monaco: Hotel de Paris, Harry’s Bar and Il Novecento including being responsible for opening the very popular Sass Café.
The prestigious international Cordon d’Or for Chef de Cuisine was presented to Chef Grigo by the Principality of Monaco.
In the late ’90s, his career trajectory brought him to the United States where he worked in Princeton, NJ and Stamford, CT for a time before settling in Charlotte, NC with his family in 2005.

After ten years serving as Executive Chef for the Conte Restaurant Group, Chef Grigo was pleased to launch his own boutique restaurant, AQUA e VINO, that focuses on bringing the small local restaurant feel from the cobblestone streets of his hometown in northern Italy.
In his words, “If it is a sunny day, I will want to make sunny food. If I wake up to rain, my guests will be welcomed with warming food. The menu will change to enhance our moods and experience.” |

FROM THE SOURCEDrawing from his career experiences in Paris, Milan, Monte Carlo and the United States, Chef Grigo selects from the freshest local produce as well as global purveyors of rare foods and delicacies not found in the region.
In Italy, there is no substitute for eating fresh. That is why Aqua e Vino has partnered with local farmers to consistently deliver fresh seasonal produce to our menus. |
